Dried glucose syrup.SO2 may be used as a processing aid at different steps of the production processes:
- Maize based dried sweeteners: SO2 is added during the wet milling process to allow effective starch separation. It acts in the
breakdown of the protein matrix of the corn kernels in which the starch granules are embedded.
- Potato based dried sweeteners: SO2 is added during the rasping of potatoes, as an antioxidant.
- SO2 is added to the starch milk for its bacteriostatic and anti-oxidizing effects.
The SO2 content in dried maltodextrin and dried glucose syrup is reduced to ≤10mg/kg by the refining processes and carries no further
function in the Product(s).
Enzymes are used at different stages of dried maltodextrin and dried glucose syrup production. Refining is however conducted in such a
way that no residual enzyme or enzyme activity can be found in the Product(s).
