The characteristics of tomato products vary according to nature and nurture. Although we have some control over finished product attributes (i.e. color, viscosity, pH, total acidity, etc.) with our production technology, we do not have full mechanical control over nutritionals within our facilities. Mineral and vitamin content in both our raw tomatoes and finished goods can widely vary, as those nutrients are absorbed by the soil, determined by the seed and influenced by the grower. There are 17 essential plant nutrients. Carbon, Hydrogen and Oxygen are absorbed from the air, while other nutrients, including water, are obtained from the soil. Plants must obtain the following mineral nutrients from the growing media:  Macronutrients: Nitrogen (N), Phosphorus (P), Potassium (K), Calcium (Ca), Sulphur (S), Magnesium (Mg);  Micronutrients: Boron (B), Chlorine (Cl), Manganese (Mn), Iron (Fe), Zinc (Zn), Copper (Cu), Molybdenum (Mo), Nickel (Ni), Selenium (Se), Silicon (Si), and Sodium (Na). Since our growing region spans 300 miles across the San Joaquin and Sacramento Valleys, our raw fruit comes from many different growing regions wherein the soil nutrient profile varies. In addition to the different growing regions (soil, climate and water), Morning Star uses close to 150 varieties of tomato seeds. Diversifying our seed selections helps us blend the right combination of varieties to create a high quality product. Although not much research has been done in regards to nutritional differences between varieties, it is assumed with some confidence that different varieties will yield different nutritional values in our finished product. Finally, since our raw product comes from the farm it sees regular human activity to ensure the crop grows effectively.
