Alpha Gum (TPI-GR0212)
Thymly’s Alpha Gum is made via a special milling process that converts all-natural flaxseed into a powder. Alpha Gum is designed to be free flowing, and easy to hydrate. This product is considered a 1:1 replacement for Guar Gum in baked goods. The blend is bland in taste. Product characteristics include enhanced textural attributes, better structure & viscosity, and increased moisture. This product is also high in fiber and Omega-3.
Directions: The recommended usage for this product is 8-16 oz. per 100 cwt. of flour or could be used at a higher level.
