We make these light, airy, orange Butternut Squash Flakes from fresh butternut squash that has been blanched, pureed and air-dried for easy use in recipes ranging from purees and soups to sauces and desserts. They taste similar to sweet potato or pumpkin, and are as simple to use as potato flakes.
