Cabra La Mancha (FF009)

A Spanish-style, semi-soft washed rind cheese—Cabra LaMancha. Every other day, our award-winning cheesemankers flip and wash wheels of Cabra LaMancha by hand using a brine comprised of water, salt and surface ripening agents. An earthy, vegetal, orange-colored rind develops as we age the wheels for 90 days. It has a semi-soft texture that heats and melts beautifully.
