Cahokia Rice is an Illinois-based, fourth-generation family farm specializing in the production of identity-preserved, non-GMO long-grain rice that is naturally higher in protein and clinically proven to have a Low Glycemic Index (GI). Developed through traditional breeding practices, our rice contains up to 53% more protein than conventional varieties, providing a functional, plant-based protein source for industrial ingredients and large-scale food service.
