4.0 PROCEDURE 4.1 All cocoa products can only be processed from cocoa beans and permitted processing aid, for instance potassium carbonate. No other materials, including any allergen shall be used for producing cocoa products in this factory. 4.2 The production facility in this factory is dedicated to process cocoa products, using only cocoa bean and permitted processing aid. No other products shall be processed in this factory. 4.3 Tools, equipments in contact with cocoa products are dedicated to cocoa processing in this factory. No tools, equipments that could in contact with cocoa products shall be shared with other process that may be in contact with allergen. 4.4 Hazard Analysis shall be reviewed every year for allergen assessment on possible sources of allergens related to process, raw material//ingredients and potential cross contact. This is to ensure allergen is designed out from our cocoa products. 4.5 An allergen list shall be available on published server to educate employee on allergens issue, and allergen awareness training shall be included in annual GMP refresher training. 4.6 To avoid contamination to product, bringing food containing allergens to plant is not allowed.
