Valley Processing, Inc.'s Concord grape concentrate is made from 100% concord grapes. Processing and filter aids are required to clarify all Concord grape juices and concentrates. These include up to 0.045% of an NOP pectinase and up to 2.5% filter aid (diatomaceous earth or perlite). Enzymes are added to the mash to remove the natural fruit pectin and the starches in the fruit. Since the enzymes are NOP, they do not contain any GMOs. All enzymes used are certified HALAL and are inactivated by the heat of pasteurization and the heat of evaporation used to produce a high brix concentrate. After being decanted, only the juice is sent forward to be filtered, where the filter aid is filtered out. Annually we test each fruit commodity for metals and pesticides from an independent lab.
