Key elements in the program include: - Management training of personnel - Review of raw material purchasing through supplier approval program - Processing GMP and Sanitation practices by lot - Labeling of materials - Storage of finished products in a controlled area - Lab testing with internal labs for allergens such as gluten validated by external 3rd party labs annually. - Annual review and process change reviews of food safety programs The most common food allergens are wheat, soy, eggs, milk, peanuts, tree nuts, fish & shellfish.
