Our Dried Pears are prepared using ripe, fresh, mature pears that have been washed, cut, peeled,
cleaned and properly sulfured for color retention, before being dried, diced, and sorted for general defects.
Our product is meticulously inspected to meet all regulatory standards and product specifications.

Physical Properties
Sulfured Pears
• Color: Uniform, with a light bright yellow color
• Flavor: sweet, slightly tart, with no evidence of off flavors
• Size (diced): ¼ inch diced
Product shall be acceptably free of defects, according to DFA tolerances.
Allergen Declaration/Chemical Attributes
Diced sulfured pears are known to be preserved with sulfites,
which is listed as an allergen in many countries and known to
cause allergic reaction. This product is not suitable for those with
sulfite allergies.
• Moisture Range: 18-20%
• Preservatives: Sulfur dioxide added as a preservative and ranges
from 1,500-3,800 ppm.
Levels may vary in accordance to customer specifications.
• Aerobic Plate Count: <1,000 CFU/g
• Yeast: <1,000 CFU/g
• Mold: <100 CFU/g
• E-Coli: <3 /g MPN
• Coliform: <10 CFU/g
• Salmonella: Negative / 375g
• Listeria: Negative / 25g
Microbiological Properties
pH 3.6-3.9 – Pathogenic bacteria grow best at neutral or biological pH
which is typically between pH 6.8-7.4
aw ranges from 0.78 - 0.83. This does not support growth of pathogenic
bacteria, which require 0.91-0.99 aw; however, it is known that
Salmonella, if present, can survive for long periods at very low aw.

Standard Packaging
Product shall be packed in new, clean and dry corrugated
cartons with liners.

Storage/Shelf Life
Dried pears are best kept in cool, dry storage (between 48 and
52°F), and should be consumed/used within 12 months for optimal
quality. For a longer shelf life, store at 32° F or less.
Organic Status
Dried pears are not an organic product.
Kosher Status
Dried Pears are Orthodox Union Kosher (OU) Pareve
Certified.
Gluten-Free Statement
Dried Pears, and the raw materials used in processing, do not contain
gluten (wheat, barley, rye, or oats).
Genetically Modified Organisms (GMOs) Status
Dried Pears, and the raw materials used in their production, are not
derived from and do not contain any genetically modified organisms
