A uniform, free–flowing powder made from clean domestic chicken eggs. The eggs are cracked, filtered, pasteurised, spray dried, sieved, packed into bags and metal detected. Pasteurisation conditions are ≥ 64 C for ≥ 2.5 min. according to FSANZ Code 4.2.5 Table to clause 21 Dehydration of pasteurised whole egg liquid is conducted at inlet temperatures of 180 – 190 C
