This ingredient is a thick, shiny, dark green leaf, which as Fresh leaves are known for their distinctive aroma, but many people use dried kaffir lime leaves. Whatever form they are used in, however, the taste of these leaves is so unique that chefs advise not to use a substitute ingredient if they run out: the flavor is essentially irreplaceable. Kaffir lime leaves can be used in both raw and cooked preparations such as boiling, steaming, and sautéing or can be sliced and used in salads or shredded for fish cakes. They are used in soups such as tom yum and hot and sour shrimp, curries, fried rice, pastes, and stir-fries. Their herbal citrus flavor can be used to infuse desserts such as custard and ice cream. Shelf life of two weeks when stored fresh in the refrigerator and up to one year when stored in a sealed container in the freezer.
