An authentic product from the Pyrénées-Atlantiques terroir, Bayonne Ham is the result of millennium-old expertise passed
down with the greatest respect for traditions. After having travelled through splendid landscapes and having visited several
small producers in the Pyrenees to find a rare gem amongst Bayonne Hams, Vincent Christophe met the Phalip family, 3
generations of meat salters. Inside their curing house, he discovered exceptional quality hams, which are the fruit of
ancestral Basque and Bigourdan methods. His decision was easy: he needed to collaborate with Salaisons de l'Adour. Jean-
Gaël Phalip has now been curing our hams for over 10 years, achieving the greatest levels of satisfaction amongst our
