GELLANEER™ ND-102R (27196)
GELLANEER™ ND-102R is a high acyl gellan gum derived from fermentation by Pseudomonas elodea. It acts as a suspension agent and mouthfeel enhancer, mainly used in plant-based protein drinks (e.g., soy, nut, cereal) and acidified milk drinks. It can also be combined with other hydrocolloids to achieve varied textures. Typical usage levels are 0.02% to 0.04%.
