: Chicken lower back is produced by cutting along the pelvic bones to separate the legs from the balk half. The lower back consist of lower backbone, ilium and pelvic bones with most of the meat and skin removed. The tail, abdominal fat and portion of kidneys and testes may or may not present. This product meets the requirements set by 9CFR381 to be labeled as “Young Chicken Backs”.
