Hard Red Winter wheat is received, cleaned, and milled to flour. Water is combined with the wheat flour in the extraction process. Caustic is used in extraction for pH control but has no functionality in the finished product. Enzyme is used in to optimize the gluten extraction process. The wet gluten is then dried and packaged.
