Glycerine is the hydrogenated derivative of glyceraldyhyde (an aldehyde) and dihydroxyacetone (a ketone) which are monosaccharides. Under paragraph (c)(6)(iii) of the Regulation, a sugar alcohol (or polyol) is the hydrogenated derivative of a sugar (saccharide). As noted above, glycerine is the hydrogenated derivative of glyceraldehyde and dihydroxyacetone, and thus is categorized as a sugar alcohol. Glycerine’s declaration in the sub-category of sugar alcohol remains voluntary in this case.
