No Roll Angus Beef Lip On Ribeye - Fresh Boxed Cryovac (231)
The lip-on ribeye (Longissimus Dorsi) is that portion of the primal rib after the removal of the chine bone, feather bones, rib cover, blade bone, back strap and cartilage. The chine bone will be removed in such a manner as to allow easy removal of the feather bones. The rib cover is removed intact along with the blade bone and surrounding cartilage. All back strap and back ribs are removed. The lip will be measured starting at a point 2” from the outer tip of the ribeye(LD) at the 12th rib, and continuing in a straight line to a point 2” from the outer tip of the ribeye(LD) at the 6th rib.
