Erysweet erythritol is a 4-carbon polyol that is 70% as sweet as sugar. It provides bulk while achieving deep calorie reductions. Erythritol occurs naturally in a wide variety of foods, including many fruits and fermented foods. Its sweetening profile is similar to sucrose with a slight cooling sensation. Of all the polyols, erythritol has the highest digestive tolerance because it is readily absorbed by the small intestine and excreted unchanged through the kidneys. Only 5% is metabolized, so calorie intake is near zero. Erythritol has the lowest molecular weight of the polyols. Erythritol adds bulk while exhibiting synergy with other sweeteners. Frozen foods benefit from its low freezing point depression. Non-browning, Erysweet is ideal for use in a variety of applications including confectionery, dairy products, and baked goods.
