Raw peeled and deveined, tail off shrimp are produced from freshly harvested farm raised shrimp. The head is removed and the maximum allowable throat meat shall be no longer than ½ the length of the adjacent abdominal segment. The body shall be completely peeled removing all the shell segments, the tail and the fins. The tail is cut longitudinally along the center of the back from the first to the fifth abdominal segments, for the purpose of removing the vein.
