Blackberry Juice Concentrate (Drum(52Gal) 10888; Pail(5Gal) 10890)

All blackberry Juice Concentrates are made from 100% blackberries. Processing and filtering aids are required to clarify all blackberry juices and concentrates. These include up to 0.045% of an NOP pectinase, up to a 0.045% of an NOP amylase and up to a 2.5% filter aid (Diatomaceous earth or perlite). Enzymes are added to mash to remove the natural fruit pectin and starches on the fruit. Since the enzymes are NOP, they do not contain GMOs. All enzymes are inactivated by the heat of pasteurization and the heat of evaporation used to produce a high brix concentrate. After being decanted , only the juice is sent forward to be filtered, where the filter aid is filtered out.
