It is a result of the preservation of Artichokes leaves after preparation, washing, Blanching on temperature from 96 ℃ : 98 ℃ and filling with hot brine solution on temperature from 95 ℃- 97 ℃ and packed in cans then pasteurization at temperature and time sufficient to preserve the product and store at room temperature, dry good ventilated place PH: 3.7:4.0 / salt 1:2 % /Acidity 0.35:0.5 / Pasteurized
