Selected strains of Lactococcus lactis ssp. lactis,
Lactococcus lactis ssp. cremoris and Streptococcus
thermophilus in highly concentrated frozen pellet
format.
These cultures are added directly to the milk for the
manufacture of American cheese.
The direct addition of these cultures to the vat
eliminates the need for bulk starter preparation.
