The flap meat (abdominis internus muscle) is that portion that lies between the strip and flank on the loin primal. Prior to separating the top sirloin from the strip, the flap meat should be pulled so that the separation can be made between the top sirloin and the strip without sacrificing the size of the flap meat muscle.
