Lactose (LACTOSE)
Lactose is one of the main constituents of human and animal milk. As a disaccharide consisting of glucose and galactose, lactose acts as an energy-carrier in milk. Due to its physiological and functional characteristics, lactose is used today in a large number of foodstuffs as well as in the pharmaceutical industry. Lactose is produced from whey, a byproduct of cheesemaking and casein production, by crystallizing an oversaturated solution of whey concentrate.
