In recent years both the state and federal regulatory agencies have placed a greater emphasis on allergen awareness. Allergic reactions to chemical, microbiological and environmental contaminants are occurring in greater numbers each day. In response to these concerns, Cloverland Farms Dairy has implemented an Allergen Awareness Program. A food allergen is a substance containing certain proteins that can cause a severe, potentially fatal reaction in a person who has the allergy. The FDA has recognized the following to be the major items that cause allergic reactions. Peanuts Tree Nuts Shellfish Milk Fish Eggs Wheat Soybeans Sesame Other recognized potential allergens include sesame seeds, sunflower seeds, cottonseed meal, poppy seeds, mollusks, beans (other than green beans), peas and lentils. In addition to allergens, there is also a list of items designated as sensitizing agents. While not specifically allergens, they can cause adverse reactions in persons and as such we need to be aware of these items. A few examples of these include Yellow #5 and Yellow #6, sulfites, and aspartame. The main focus of the program is to eliminate any ingredients or contaminants that are not listed on the product ingredient statement and that may induce an allergic reaction in some individuals. Most of Cloverland products have allergens in them since they are dairy products containing cow’s milk. In addition, one product, Egg Nog, introduces the egg allergen. Because milk is an allergen to some, precautions need to be taken to insure that it is not incorporated into our non-dairy products. These precautions include a thorough washing and testing of all equipment and product lines prior to running a non-dairy item such as juices or drinks.
