With its tender and oily texture, this cheese takes its characteristic red
and orange tones by the washing of the rind during the aging process
with Annatto, a natural vegetable colouring used for centuries to colour
and protect cheese surface. In the mouth, a sweet sensation of warm milk combines with the nice and lightly bitter vegetable note.
