220B Soy Flour finds major use in bakery applications such as donuts and sweet goods. the defatted soy flour used is functional Bakers Soy Flour to which 15% commercial lecithin is added. 220B Soy Flour is minimally processed raw ingredient for which no kill step is applied. ADM does not consider this ingredient as Ready to Eat and it should not be used by our customers in Ready to Eat finished applications. Further processing is required to ensure reduced microbial levels.
