This rare cheese, also known in Holland as "Grasskaas", is made from the first milking's of Spring. After the cold winter, the cows are released from the barns and given their first feast of the lush green pastures of Holland. The fresh milk that they produce at this time is highly cherished because it is only available a few weeks per year, and its creamy nature is what gives our Spring Cheese its delightfully rich taste and smooth texture.
