Cilantro Chopped Fresh (#52)
US/Mexico Grade #1 Cilantro shall be used to further process our finished product. Cilantro shall be fresh, uniform in color (green) with no signs of discoloration (yellow) on leaves.
Cilantro is hand selected, rubber bands are manually removed from every cilantro bunch and cleaned under cGMP (Current Good Manufacturing Practices) Rules. Cilantro is then passed through Slicer machine (Model Q) using the blade size requested by customer. Product is then washed with chilled water between 60-80 ppm of BioSide HS 15% (Peroxyacetic Acid/Peracetic Acid) at 33-40F of water temperature) (Contact Time: Minimum of one minute). Product is then put into the spin dry basket in the square tank area and then the product is spin dried to remove the excess of water/moisture (Contact Time: minimum of 1 minute). Product shall be packed in food grade plastic bags (blue tint) and properly sealed. Packaged product is then passed through our calibrated metal detector and boxed for shipping/distribution. All processing is in accordance with Current Good Manufacturing Practices.
