IQF Diced Apples (Generic) (APD10271)

Individually quick-frozen (IQF) diced apples shall be prepared from sound, properly ripened, alar-free apples. The variety of the apple is to be determined by Peterson Farms and/or the customer's requirements. The fresh apples shall be free of rot, stems, leaves, and other fm. The fruit shall be thoroughly washed prior to processing. The fruit is then peeled, cored, trimmed, diced to PFI or customer-specific size, sorted, washed, drained, & vacuum processed. The fruit shall be thoroughly inspected throughout the production process to remove all defective pieces. The fruit shall remain in the vacuum solution, for a length of time needed for good penetration, depending on the fruit's maturity. The fruit shall be properly drained after vacuum processing to ensure the dices do not have an excessive coating of water post IQF. The fruit shall be rapidly handled prior to being individually quick frozen on our commercial IQF belt-type freezer. IQF diced apples shall be packaged at -10°F or below.
