Apple Juice Concentrate (APL (FILTERED) CONC 70 BRIX)
Apple Concentrates are made from 100% fruit.
Enzymes are required to remove the natural fruit pectin and starch and to prevent gelling when juice is heated at the pasteurizer or evaporator. This includes up to 0.045% pectinase and up diatomaceous earth, perlite, carbons, gelatin, bentonite and silica.
Enzymes are inactivated by the heat of pasteurization and the heat of evaporation used to produce a high brix concentrate. After being decanted, only the juice is sent forward to be filtered, where the filter aid is filtered out.
