We, Lallemand Bio-Ingredients, hereby confirm that an efficient HACCP system is implemented at Salutaguse Pärmitehas AS to guarantee
the allergen status of the products and to avoid possible cross-contamination. The HACCP program includes:
- An allergen and cross-contamination policy. The allergen policy includes a list of 14 allergens, list of allergens used on site and
allergenic product and raw material groups. Procedures and instructions describes restrictions in using other departments tools,
obligation to wash tools between product switches, actions in case of allergic product spillage;
- A risk assessment on each raw material based on information provided from suppliers. All allergenic materials are submitted to labeling
with allergen name;
- Rules for subcontractors – restriction to use site’s tools without prior agreement with plant representative;
- An annual hygiene training for all site’s employees including information about allergens according legislation, allergens and allergenic
materials and products used on site, importance of procedures in regard to allergens;
- Production planning (eg. allergen-free products before allergen products, production of allergen products in bigger amounts to avoid
small productions between allergen-free productions, etc);
- Verification of cleaning procedures, taking into account analytical data when cleaning procedures are described;
- Allergen analyzes of allergen-free products. Samples are taken from the first package of the first lot produced after the cleaning that
excludes possible dilution of the allergen through continuous production process.
