Prepared from clean, mature, peeled and cored apples. The apples are cut into the desired size, dried to evaporate moisture with color and flavor added, and properly dried to not more than 3.5% moisture by weight, processed through a rolling mill and screened. LM Apple flakes are treated with sodium sulfite to reduce the rate of browning. Calcium stearate may be used for anti-caking at a level not to exceed 3% in the finished apple flake.
