Locust bean gum (carob bean gum, E410) is a galactomannan vegetable gum extracted from the seeds of the carob tree and used as thickener, stabilizer, emulsifier and gelling agent. It consists mainly of a high molecular weight hydrocolloidal polysaccharide, composed of galactopyranose and mannopyranose units combined through glycosidic linkages, which may be described chemically as galactomannan. It provides excellent freze/thaw stability characteristics and usually has good synergy with other hydrocolloids. It is mainly used in ice cream, cream cheese,yoghurt, sauces, salad dressings and soft drinks.
