CHARACTERISTICS:
Pectinase activities are necessary to extract color, like the high level cellulase and hemicellulase activities. This is the case with LYSIS® COULEUR. These activities are completed by proteolytic activities which stabilize color.
APPLICATION FIELDS:
On any type of quality red wine
LYSIS COULEUR is a microgranular enzymatic preparation of pectinases, concentrated in cellulases derived from Aspergillus niger , used for extracting and stabilizing the color of red wines.
LYSIS COULEUR is naturally poor in cinnamoyl esterase and thus prevents the formation of volatile phenols.
OENOLOGICAL PROPERTIES
Increased extraction of color and tannins based on high concentration of cellulase
Depectinization of the harvest for improved clarification, filterability and extraction of aromatic precursors
Extraction of silky tannins necessary for stabilizing color and for producing a harmonious taste.
