Allium is the second cheese in Mt. Townsend Creamery’s seasonal line of soft ripened cheese. It is produced in limited quantities from February through March and captures the essence of the Northwest Spring season. Spring bursts into effect earlier here than it does in the other northern regions and is welcome after short, dark winter days. Wild members of the Allium family are some of the first plants to grow at this time of year and can be found peeking through rock walls and along sidewalks. Allium is Mt Townsend’s cheese tribute to Spring. It’s creamy interior creates a rich balance for the prominent savory flavors of shallot and chive.

Seastack is inspired by the rock formations along the Northwest coast. Its ripened exterior offers an earthy, briny flavor which is balanced against a bright, milky interior. As it ages, Seastack’s pate softens to a soft, fudge-like texture.
