Allergen Control Program and Cross-Contamination Prevention FONA International completes a thorough wet-clean process in between each batch of product. This is completed for prevention of flavor/odor cross-contamination as well as for allergen control. This wet-clean process uses detergent and a sanitizer that is designed to assist in the removal of allergenic proteins. The cleaning process is verified by our in-house allergen testing program using Hygiena PRO-Clean Swabs. Food contact surfaces are swabbed and tested for total protein. By testing for protein, we are able to use those results as surrogates to prove the efficacy of our cleaning methods to remove allergen from food contact surfaces and the environment. FONA International also uses ATP tests as an additional verification. ATP is found in all living cells and is a good indicator of cleaning performance. All processes and equipment are designed to include the ease of cleaning to prevent crosscontamination and are inspected prior to use. This program complies with our GMPs, HACCP and Food Quality Plans. In addition, allergen training is provided to every FONA employee in an annual basis. Other allergen control practices in place include segregated allergen storage for ingredients, identification of allergens throughout the process, and allergen labeling on finished products which meets current regulation. FONA International also utilizes a dust collection system on the manufacturing floor, to minimize product dust in the environment.
