Pear Juice Concentrate (10204)
All Pear Juice/Concentrates are made from 100% fruit. Enzymes are required to remove the natural fruit pectin and starch and to prevent gelling when the juice is heated at the pasteurizer or evaporator.This includes up to 0.45% pectinase and up to 0.045% amylase. Up to 2.5% processing and filter aids required. These may include diatomaceous earth, perlite carbons, gelatin, bentonite and silica. Enzymes are inactivated by the heat of pasteurization.
