PEKTOZYME™ Mash is a robust pectinase
preparation derived from a selected strain of
Aspergillus niger containing polygalacturonase activity
that targets soluble pectin for hydrolysis. Designed for
fruit maceration and cell wall degradation, for
increased yield and more efficient processing.
Composition
• Glycerol 45-55 % (w/w)
• Water 30-40 % (w/w)
• Sodium chloride 8-10 % (w/w)
• Pectinase 1-10 % (w/w)
