Trim Specs: This boneless item shall consist of the inside (top), outside (bottom), and knuckle (leg tip) portions of the leg separated. The inside shall be as described in Item No. 402F. The outside shall be as described in Item No. 402E. The knuckle leg tip portion shall be as described in Item No. 402H. All bones and cartilage shall be removed. Additional Description: Trimmed to the blue. All bones, cartilage, exposed heavy connective tissue, shall be removed, membrane skin present and some fat cover present.
