Potassium Bicarbonate (PBFK)

A white crystalline powder that is odorless and stable in air. Its solutions are alkaline to phenolphthalein TS. It is soluble in water and almost insoluble in alcohol. It performs exceptionally well as a leavening base for the leavening system of cakes, cookies, muffins, and biscuits. Products that incorporate Potassium Bicarbonate exhibit excellent volume, crumb, and crust qualities.
