Pregelled Decorticated Green Lentil Flour is a product that is pre-gelatinized by a high temperature short time heat treatment. This ingredient has gone through a validated 5 log micro reduction (pasteurization) process. It is manufactured from food quality decorticated green lentils. No chemicals are used at any stage in the manufacturing process. Pregelled Decorticated Green Lentil Flour is a functional ingredient for food product formulation where thickening and binding properties are desired. Since the starches are fully cooked out, the product is essentially instantized. The product has good freeze thaw stability in moist food systems and works well in extruded products and pasta applications.
