Georgia Gouda is a raw cow’s milk cheese that is aged for a minimum of 60 days. Our Gouda has a rich yellow color with a smooth texture that lends well to melting. The flavor starts with a bit of tanginess that gives way to a sweet and buttery finish.
Named after our owner's third son, Griffin is an adaptation of our Tomme recipe with the addition of soaking the curds in an entire half barrel of Terminus Porter from Gate City Brewing. Aged for approximately 120 days, Griffin has a crumbly texture and malty flavors.
A fresh, spreadable cow's milk cheese that can be used in a wide range of sweet and savory recipe applications. Similar to cream cheese, our Lil' Moo is a 100% clean product made with whole milk instead of cream for a lighter texture and a more tangy profile.

A farmhouse table cheese named for our hometown, made in the style of a French (Pyrenees) mountain tomme. Released between 60–90 days, it is naturally rinded with a semi-soft texture and subtle grassy flavors.
