TagaLite Tagatose (1910)
Tagatose is a naturally occurring monosaccharide derived from lactose that is approximately 90% as sweet as sugar. It provides bulk while delivering significant calorie reduction. Tagatose occurs in small amounts in dairy products and some fruits. Its sweetening profile is very similar to sucrose, with a clean taste and no cooling effect. Tagatose is only partially absorbed in the small intestine, with the remainder fermented in the large intestine, contributing a low caloric value of about 1.5 kcal/g. It has a low glycemic impact and is tooth-friendly. Tagatose participates in Maillard browning, making it well suited for applications where color and flavor development are desired. It performs well in a variety of applications including confectionery, dairy products, beverages, and baked goods.
