Trisodium Citrate (10207)

Trisodium citrate dihydrite (common name is Sodium citrate) is composed of white, granule crystals that are freely soluble in water and 96% insloluble in moist air. Product comes from Citric Acid (from fermentation with glucose syrup inocculated with Aspergillus niger) netralized with sodium hydroxide. Primarily used as a buffering, sequestering, or emulsifying agent in various food applications.
