Invierno is our semi-hard raw-milk mixed cow and sheep milk cheese. Aged 5-8 months with a natural rind. Flavor is rich and earthy with a bite and notes of chanterelle mushroom. Melts beautifully.

Verano is o ur summer cheese, made from the raw milk of our 200 pasture-fed sheep on our farm in Westminster West, VT. This natural rind cheese is aged in a cave for 4-7 months. The flavor is sweet and full with a creamy texture.
