July 4th (Red, White, and Blue) Square Waxed Cheese Tower.

Farmhouse Cheddar, Red Leicester and Wensleydale cheese made from a dedicated Farm Assured (Red Tractor) milk supply taken from local farms and pasteurised to legal limits. Starter culture & rennet (suitable for a vegetarian diet, benzoate free) are added. The curd is cut, stacked and turned before salt is added. Cheese is then matured in vacuum bags before further processing. Cheddar and Red Leicester cheese either from block or off-cuts, and Wensleydale cheese blended with dried Blueberry and sugar are extruded into the required shape / size, weight and passed through food grade wax prior to refrigeration. Cheddar – Blue Waxed Square Wensleydale with Cranberry – Burgundy waxed Square Red Leicester (Red Sky) – Blue Waxed Square Cheese is then labelled, stacked and wrapped in a cellophane wrapper with outer tag. Base label applied to unit.

A hard pressed cheese manufactured from pasteurised whole cow’s milk Wensleydale cheese combined with dried sweetened cranberries and white granulated sugar. Block cheese is bowl chopped with fruit and sugar, pressed in moulds then refrigerated <5ºC. Cheese is cut and packed into final food grade packaging, weighed and labelled. The manufacturing process follows Good Manufacturing Practice supported by a comprehensive HACCP system.
