SpiceIT® M100\6Kg (221404)

SpiceIT® M100 is a standardized solution of a Y. lipolytica lipase produced by submerged fermentation with a Komagataella
phaffii strain. SpiceIT® M100 catalyzes the breakdown of fat which results in the formation of free fatty acids. Free fatty acids contribute to the improved flavor of various cheese types. Specifically, this lipase results in the formation of shorter
chain free fatty acids which contribute to a piquant and butyric flavor. The production organism is kept under contained
condition and is not present in the final product.
