The French Navy Bean (Phaseolus vulgaris) is also referred to as "white pea bean" or "coco blanc." It is not related to the common navy bean, which was issued as a standard ration by the U.S. Navy during the 19th century. Although they resemble the navy bean, they are smaller and more rounded, and have light celadon green shading along one side. French Navy Beans boast high nutritional value, low cost and long storage life. They contain high levels of protein, iron and calcium, while maintaining a low level of fats, making them a wholesome and economical addition to salads, soups and side dishes.
